- Prep the Pan and Potatoes
Preheat the oven to 400°F and line a sheet pan with parchment paper. Add the halved potatoes to the sheet pan, toss with olive oil and seasonings, and roast until they begin to soften and lightly brown. This gives them a head start before everything else goes in.
- Add the Vegetables
Once the potatoes are partially cooked, add the green beans and cherry tomatoes to the pan, drizzle with olive oil, and season. Keep everything spread out so the vegetables roast evenly.

Ingredients
- 4 salmon fillets (about 3-4 oz each)
- 3 tbsp olive oil, divided
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ¾ tsp black pepper, divided
- 1 ¼ tsp salt, divided
- ¼ cup maple syrup
- 1 tbsp Dijon mustard
- 1 lb petite gold potatoes, halved
- ½ lb green beans, trimmed
- Juice from ½ fresh lemon
- 10 oz cherry tomatoes, halved
- Optional: ½ tsp crushed red pepper
- Optional: Fresh parsley, for garnish
Instructions
- Preheat oven to 400°F and line a 9x13” baking sheet with parchment paper.
- Toss the halved potatoes with 2 tbsp olive oil, ½ tsp salt, ¼ tsp pepper, ½ tsp paprika, ½ tsp garlic powder, and ½ tsp onion powder. Spread them out on the sheet pan and roast for about 20 minutes, until they start to soften and get lightly golden.
- While the potatoes are roasting, season your salmon fillets with ¼ tsp salt, ¼ tsp pepper, and the leftover paprika, garlic powder, and onion powder. Set aside.
- Once the potatoes are ready, push them to one side of the pan. Add the green beans and cherry tomatoes to the middle, drizzle with the last tablespoon of olive oil, season the remaining salt and pepper, and toss to coat.
- Whisk together the maple syrup, Dijon mustard, lemon juice, optional crushed red pepper, and ¼ tsp salt to make your glaze. Trust me, this is where the magic happens!
- Place the salmon on the empty third of the pan and brush generously with the maple glaze. Save a little for later.
- Pop the sheet pan back in the oven and bake for 12–15 minutes, until the salmon flakes easily.
